Blood pudding (Tiet Canh) is a unique Vietnamese dish that you shouldn't miss when visiting San Francisco. Below are some places we recommend to enjoy this dish. Note: Raw blood pudding is currently not served in restaurants in the US due to FDA regulations. The dishes above use cooked blood in the soup/broth. Try Hue beef noodle soup with blood pudding or crab noodle soup for a similar taste experience.
Bún Bò Huế with Tiết (at Turtle Tower) top-pick
While you can't get blood pudding at any SF restaurant, you can enjoy bun bo Hue — the spicy Central Vietnamese noodle soup — which sometimes includes cooked blood cubes (blood cubes) as a topping. Turtle Tower's rendition of this classic soup is excellent, with a deeply savory broth, thick rice noodles, slices of beef shank, and pork sausage. The cooked blood cube, when available, provides a similar textural experience to blood pudding but in a fully cooked, food-safe preparation. The broth is spicy, aromatic, and complex.
Bún Riêu (at various SF restaurants) best-value
Bun rieu — a Vietnamese crab noodle soup — is another excellent alternative. While it doesn't contain blood, it's a rustic, deeply savory soup that shares blood pudding's soulfulness. The broth is tomato-based, with crab paste, fried tofu, and pork. The sour-savory flavor profile is distinctly Vietnamese and satisfying. Pho 2000 in the Inner Sunset serves a solid version, and it's a dish that celebrates the same nose-to-tail, no-waste philosophy as blood pudding.
Cháo Lòng (at Bodega SF or Tú Lan) hidden-gem
Vietnamese pork congee with offal — is probably the closest safe alternative to the tien canh experience. This hearty rice porridge is loaded with pork offal (intestines, liver, heart) and sometimes includes cooked blood cubes. Tu Lan on 6th Street and Bodega SF in the Tenderloin both serve versions of offal-based dishes that evoke the same traditional Vietnamese flavors. The congee is warm, comforting, and deeply savory — a genuine taste of Vietnamese home cooking.
