The five-spice powder gives it that unmistakable Chinese-Vietnamese flavor profile, while the fish sauce and soy sauce provide a salty-umami backbone. For the chicken
- 2 lbs chicken thighs or drumsticks (bone-in, skin-on)
- 2 tablespoons fish sauce
- 1 tablespoon five-spice powder
- 1 tablespoon brown sugar
- 1 teaspoon white pepper
- 4 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 shallot, thinly sliced
For braising
- 1 cup coconut water (or 1 cup water + 1 tablespoon sugar)
- 2 tablespoons soy sauce
- 1 tablespoon dark soy sauce (for color)
- 1 star anise pod
- 1 cinnamon stick
For garnish
- 2 green onions, sliced
- Fresh cilantro
- Fried shallots (optional)
Instructions
Marinate the chicken
In a bowl, combine fish sauce, five-spice powder, brown sugar, white pepper, garlic, ginger, and shallot. Add chicken and toss to coat. Marinate for at least 30 minutes (up to 4 hours in the fridge).
Sear the chicken
Heat a heavy-bottomed pot or Dutch oven over medium-high heat. Add a splash of oil and sear chicken pieces skin-side down until golden brown, about 4 minutes per side. Work in batches if needed.
Braise
Return all chicken to the pot. Add coconut water, soy sauce, dark soy sauce, star anise, and cinnamon stick. Bring to a boil, then reduce heat to low. Cover and simmer for 25-30 minutes, until chicken is tender and cooked through.
Reduce the sauce
Remove the lid and increase heat to medium. Let the sauce simmer and reduce until it's thick and glossy, about 5-7 minutes. Stir occasionally to coat the chicken.
Serve
Transfer chicken to a serving platter. Spoon the reduced sauce over the top. Garnish with green onions, cilantro, and fried shallots. Serve with steamed jasmine rice.
