Bún cá is a vibrant, aromatic fish noodle soup that varies dramatically by region — from the turmeric-golden, dill-flecked broths of Hanoi to the porky, shrimp-topped versions of Kien Giang in the south. The broth is clean and savory with a subtle fish essence, while the toppings add layers of texture: tender fish, crispy shrimp patty, cool cucumber, and tangy pickled leeks. A squeeze of lime and a spoonful of pickled leeks brighten every slurp.

Ingredients

    For the broth

    • 2 lbs pork knuckle bones or pork neck bones
    • 1 onion, halved
    • 2 tablespoons fish sauce (preferably Son or other artisanal fish sauce)
    • 1 tablespoon salt
    • 8 cups water
    • 1 tablespoon sugar

    For the fish

    • 1 lb firm white fish fillet (snakehead, catfish, or tilapia)
    • 1 tablespoon fish sauce
    • 1/2 teaspoon turmeric powder
    • 1/2 teaspoon white pepper

    For the smacked shrimp topping

    • 1/2 lb shrimp, peeled and deveined
    • 1 egg
    • 1/4 teaspoon salt
    • 1/4 teaspoon white pepper
    • 2 tablespoons vegetable oil (for frying)

    For serving

    • 1 lb dried rice noodles (bún/maifun), cooked according to package directions
    • 1 cucumber, thinly sliced
    • 1 cup bean sprouts
    • 1/2 cup Vietnamese coriander (rau răm), roughly chopped
    • 1/2 cup fresh dill, chopped
    • 1 can pickled leeks (Fortune brand or similar)
    • 2 limes, cut into wedges
    • Fresh red chiles, sliced

    Instructions

    Make the broth

    In a large pot, add pork bones and cover with cold water. Bring to a boil, then drain and rinse bones. Return bones to pot with 8 cups fresh water, onion, fish sauce, and salt. Bring to a boil, then reduce to a simmer. Skim any foam. Simmer for 1 hour.

    Prepare the fish

    While broth simmers, season fish fillets with fish sauce, turmeric, and white pepper. Set aside for 15 minutes.

    Make the smacked shrimp

    Pound shrimp with the flat side of a knife or rolling pin until flattened but not pulverized. Mix with beaten egg, salt, and pepper. Fry in hot oil in a non-stick pan until golden on both sides, about 2 minutes per side. Cut into bite-sized pieces.

    When broth is ready, remove bones and onion. Strain broth if desired. Bring broth back to a gentle simmer. Add seasoned fish fillets and poach for 5-7 minutes until just cooked through. Remove fish and flake into large chunks.
