Cánh Gà Chiên is one of those dishes that rewards patience and attention to detail. This recipe captures the authentic flavors that make this dish a Vietnamese staple.
Vietnamese fried chicken wings are a masterclass in umami — the fish sauce marinade penetrates deep into the meat, while the sugar caramelizes on the skin to create a sticky, salty-sweet crust that's utterly addictive. The garlic and white pepper add aromatic warmth, and a squeeze of fresh lime cuts through the richness. These are the wings you order at a Vietnamese beer hall (quán nhậu) alongside a cold glass of bia hơi, and they're just as good at home.Ingredients
For the marinade
- 12 chicken wings, separated into drumettes and flats
- 3 tablespoons fish sauce
- 2 tablespoons brown sugar (or palm sugar)
- 4 cloves garlic, minced
- 1 shallot, minced
- 1 teaspoon white pepper
- 1/2 teaspoon salt
- 1 tablespoon vegetable oil
For the glaze (optional)
- 2 tablespoons honey
- 1 tablespoon fish sauce
- 1/2 teaspoon chili flakes (optional)
For frying
- 4 cups vegetable oil (for deep frying)
- 1/2 cup cornstarch (for coating)
For serving
- Fresh cilantro, chopped
- Lime wedges
- Sriracha or chili garlic sauce
Instructions
Marinate the wings
In a large bowl, combine fish sauce, brown sugar, garlic, shallot, white pepper, salt, and oil. Add chicken wings and toss to coat. Cover and refrigerate for at least 1 hour, up to 4 hours.
Prepare the glaze (if using)
In a small bowl, mix honey, fish sauce, and chili flakes. Set aside.
Coat the wings
Remove wings from marinade and pat dry with paper towels. Toss with cornstarch until lightly coated.
Fry the wings
Heat oil to 350°F in a deep pot or wok. Fry wings in batches (don't overcrowd) for 8-10 minutes, turning occasionally, until golden brown and cooked through. Internal temperature should reach 165°F.
Glaze (optional)
In a separate pan, heat the honey-fish sauce glaze over medium heat. Toss fried wings in the glaze until coated.
Serve
Arrange on a platter, garnish with cilantro, and serve with lime wedges and chili sauce.
