The rice flour cake has a dense, bouncy texture similar to Chinese turnip cake (lo bak go), but without the savory fillings. Pan-fried until golden and crunchy on the outside while staying soft and chewy inside, each cube is a textural delight. The tangy-sweet soy dipping sauce cuts through the richness, while the fresh papaya salad adds a bright, crunchy contrast.

Ingredients

    For the rice cake

    • 1 cup rice flour
    • 1/4 cup tapioca starch
    • 1/2 teaspoon salt
    • 1 teaspoon sugar
    • 1 tablespoon vegetable oil
    • 2 cups water
    • 1/2 teaspoon turmeric powder (for color)

    For frying

    • 3 tablespoons vegetable oil
    • 2 cloves garlic, minced
    • 1 shallot, thinly sliced
    • 1 green onion, sliced (for garnish)

    For the dipping sauce

    • 2 tablespoons soy sauce
    • 1 tablespoon rice vinegar
    • 1 tablespoon sugar
    • 1/2 teaspoon chili garlic sauce
    • 1 clove garlic, minced
    • 1 tablespoon water

    For serving

    • 1/2 cup julienned green papaya or carrot
    • Fresh cilantro
    • Fried shallots

    Make the batter

    In a bowl, whisk together rice flour, tapioca starch, salt, sugar, turmeric, and water until smooth. Stir in vegetable oil.

    Steam the cake

    Pour batter into a greased 8x8 inch baking dish or heatproof container. Steam over high heat for 20-25 minutes, until firm and set. A toothpick inserted should come out clean.

    Let the cake cool completely at room temperature, then refrigerate for at least 1 hour (or up to overnight) until fully firm.
