The rice flour cake has a dense, bouncy texture similar to Chinese turnip cake (lo bak go), but without the savory fillings. Pan-fried until golden and crunchy on the outside while staying soft and chewy inside, each cube is a textural delight. For the rice cake
- 1 cup rice flour
- 1/4 cup tapioca starch
- 1/2 teaspoon salt
- 1 teaspoon sugar
- 1 tablespoon vegetable oil
- 2 cups water
- 1/2 teaspoon turmeric powder (for color)
For frying
- 3 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 shallot, thinly sliced
- 1 green onion, sliced (for garnish)
For the dipping sauce
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sugar
- 1/2 teaspoon chili garlic sauce
- 1 clove garlic, minced
- 1 tablespoon water
For serving
- 1/2 cup julienned green papaya or carrot
- Fresh cilantro
- Fried shallots
Instructions
Make the batter
In a bowl, whisk together rice flour, tapioca starch, salt, sugar, turmeric, and water until smooth. Stir in vegetable oil.
Steam the cake
Pour batter into a greased 8x8 inch baking dish or heatproof container. Steam over high heat for 20-25 minutes, until firm and set. A toothpick inserted should come out clean.
Cool and set
Let the cake cool completely at room temperature, then refrigerate for at least 1 hour (or up to overnight) until fully firm.
Cut the cake
Turn the cake out onto a cutting board. Cut into 1-inch cubes.
Make the dipping sauce
In a small bowl, whisk together soy sauce, rice vinegar, sugar, chili garlic sauce, garlic, and water until sugar dissolves. Set aside.
Fry the cake
Heat oil in a large non-stick pan or well-seasoned wok over medium-high heat. Add garlic and shallot, cook for 30 seconds. Add the rice cake cubes in a single layer (work in batches if needed). Fry without moving for 3-4 minutes until golden and crispy on the bottom. Flip and fry the other sides until all sides are crispy and golden.
Serve
